This Curry Chicken Salad recipe is quick and easy to make. It is perfect when you're looking for new flavor variations from classic chicken salad, it is full of feel-good ingredients and delicious flavor. Just a few ingredients, like curry powder, chicken, dried blueberries, celery, almonds, and mayonnaise. You can use leftover cooked chicken, or canned chicken. During the hot summer months I opt for canned chicken so there is no cooking involved. The recipe I am sharing here is a spin off from a curry chicken salad that I use to make with raisins. To keep it low carb / keto friendly I used dried blueberries that I dried myself in my food dehydrator, which I will explain next. However, if you don't want or have to ability to dry your own blueberries, you can purchase them. Just make sure you purchase unsweetened dried blueberries and check the nutritional information for the carbohydrates and make sure there is no added sugars. There is some controversy on the sugar content increasing when you dry fruit and berries. My understanding is that the sugar content does not increase per berry but per volume of berries/fruit the carbs and sugar are not equal. Meaning 1 cup of dried blueberries is not going to be the same as 1 cup of fresh blueberries. So what I did was I measured out 1 cup (148g) of blueberries before I dried them. The net carbs for 1 cup of fresh blueberries is approximately 17.4g. After drying the blueberries, I weighed and measure again which came out to be approximately 1/3 cup (31g) of dried blueberries. So I am going to go with that the dried blueberries will have the same net carbs, 17.4g. If I am wrong, someone can let me know.
Curry Chicken Salad | Low Carb | Keto
Ingredients:
1 12.5 oz. can Premium Chunk Chicken, or 1 chicken breast cooked and chopped
1/2 cup mayonnaise
1 stalk celery, chopped
3 tablespoons slivered almonds (or chopped pecans)
2 tablespoons unsweetened dried blueberries
3/4 teaspoon curry powder
1/8 teaspoon salt
1/8 teaspoon pepper
Directions: 1. In a small bowl, combine the mayonnaise with the curry powder, salt and pepper and mix well.
2. In a medium bowl, combine the chicken, celery, dried blueberries, and almonds. Pour the dressing over top and stir until evenly coated.
3. Serve chilled a bed of fresh greens or low-carb crackers, or your favorite way.
